What defines the composition of red date concrete?
It is an aqueous fruit concentrate whose identity markers are total sugar (glucose/fructose, by GB 5009.8), soluble solids (Brix), total acid, polysaccharides, and cyclic adenosine monophosphate (cAMP) — the characteristic sweet, date-like, nourishing profile. Top fingerprints total sugar + Brix + cAMP/polysaccharide as authenticity/quality markers (adulteration with sugar-water or other fruit concentrate is screened by the sugar/acid ratio and the cAMP/polysaccharide HPLC or assay).
The concentrate also contains fruit solids and colour pigments. Each COA reports soluble solids, total sugar, total acid and cAMP/polysaccharides; the identity is the natural jujube fruit concentrate spectrum, not a single volatile oil.
